Muesli, Ginger and Apricot Smoothie
15g piece fresh root ginger
8 plump dried apricots, roughly chopped
250ml apple juice (or water)
1 tbsp lime or lemon juice
4 tbsp natural low fat yogurt
Peel the ginger and grate the flesh into a food processor or blender. Add the muesli, apricots and a little of the apple juice and blend until smooth, scraping the mixture down from the sides of the bowl.
Add the remaining apple juice and lime or lemon juice and blend again. Pour into two tall glasses and spoon the yogurt on top. Lightly swirl the yogurt into the smoothie and serve.
