Green Beans with Tomatoes
15ml.1 tbsp olive oil
1 large onion, thinly sliced
2 garlic cloves, finely chopped
6 large ripe plum tomatoes, peeled, deseeded and coarsely chopped
150ml/¼ pint.2/3 cup dry white wine
450g/1 lb French green beans, sliced in half lengthways
16 stoned black olives
10ml/2 tsp lemon juice
salt and freshy ground black pepper
Heat the oil in a large frying pan. Add the onion and garllic and cook for about 5 mins until the onions softened but not brown, stirring occasionally.
Add the chopped tomatoes, white wine, beans, olives and lemon juice and cook over a gently heat for a further 20 mins, stirring occasionally, until the sauce is thickened and the beans are tender Season with salt and pepper to taste and serve at once.
