Fennel and Octopus Salad

Serves 4

Ingredients

2 fennel bulbs

1 octopus 800g, cleaned

20g caviar

4 tbsp olive oil

half a lemon

1 tbsp pink peppercorns

salt

 

Clean the octopus, and put in a pan of salted water about to boil.  Lower the heat and simmer for 30 mins.  Leave to cool in the pan, then remove and cut in small pieces.  Put the caviar in a plate, pour over the oil, lemon juice, the peppercorns and leave to settle for 10 mins.  Clean the fennel bulbs and slice thinly.  Mix all ingredients together that is the octopus, fennel, caviar with the dressing.  Garnish with piece of lime and serve.
