Turkey fillets in Yogurt Sauce
4 turkey breasts, skinned or 4 chicken breasts, skinned and boned
3 tbsp natural yogurt low fat
2 tbsp ground paprika
2 tsp mild chilli
1 tbsp olive oil
1 clove garlic, crushed
pinch of salt
freshly ground pepper
grated rind of juice of 1 large orange
With a sharp knife, mark a lattice of cuts across the surface of each turkey fillet. Beat together the yogurt, paprika, chilli, olive oil, garlic and a pinch of salt and pepper. Stir in the orange rind and 3 tbsp of juice. Place the turkey in a shallow, flameproof dish. Spoon over the yogurt mixture. Cover and refrigerate for at least 1 hr or preferably overnight.
Cook the turkey under a preheated grill for about 8 mins each side, basting with the marinade as it cooks. Serve with salad.
